What's next?


Now that I'm a triathlete, I have bigger and better things to do than I did before. Well, not really, but I have decided which three goals I am going to focus on next... which happen to be in order. Meaning that I am awesome at prioritizing goals. Franklin Covey would be so proud.

2. Stay involved in Tae Kwon Do.
I feel like I am making a comeback here. My feet are both intact. My kicks are getting strong again, although they are not where they used to be but it's an improvement. My next step is to go over everything I have already learned. I feel a bit rusty from all of the neglect I've shown my first child (TKD) lately in order to help my second child (triathlon training) thrive.

3. Reach my goal weight of 160 lbs. and maintain it.
I noticed that while I was training for the triathlon, I did not lose weight. I gained muscle tone, and I can tell a difference in my legs and stamina, but weight has been the same. I believe it is because I was eating so much to fuel my body. Now it's time to get back to the calorie restriction and a more normal cardio level. And guess what? I lost a pound this week. Or maybe it was two pounds. One or two pounds in a week after a several month long plateau... That's a good start!

4. Learn how to cook without dairy and eggs.
My mom and I are at the Lake Austin Spa this weekend. We caught the tail end of what they call the Culinary Experience. Everyday, there is a cooking demonstration. It is so much fun and inspiring... of course, the experts make everything look easy, but I am still excited to try it on my own. Here are some pics from today's demonstration... the one that I didn't get was dessert, a chocolate ganache that I can totally make using soy milk and vegan chocolate chips. The first pic is a salad with cactus, mango and bison garnish with homemade corn tortillas. The second is a corn, crab, chile and bean soup... made from scratch! completely! I mean, of course it would be, it's in a cooking demonstration, but I was very impressed. The soup has absolutely no dairy/eggs in it at all.
