One of the first things we planned for our Paris trip was a cooking lesson with Elise Pierce, the cowgirl chef. I found her when I was clicking through blogger blogs at work one day. She is a writer from Dallas that moved to Paris and has expanded her career into the culinary field with tex-mex catering for locals and french cooking lessons for visitors as well as a blog and an upcoming cookbook.
Once we scheduled a date, it was decided that we would do a "French-Tex" cooking class, which consisted of the following
• Cantaloupe and prosciutto with cucumber avocado gazpacho
• Salmon with tomato and caper salsa
• Fresh peaches with peach granita
• coffee and wine
Elise and her australian shepherd, Rosie, welcomed us into her home and kitchen for a few hours while she cooked for us and showed us a few tricks. I've already made the salmon, tomato salsa (I can't bring myself to call this a salsa, so I settled on sauteed tomatoes) and the gazpacho at home. Very tasty.
