The Kitchen! Because Goal #4 (Learn how to cook without dairy and eggs) was big on my mind last weekend. It started with Friday night dinner - a new thing... title pulled from the best TV series ever in the history of the world, Gilmore Girls, which might only be second to the other best TV series ever in the history of the world, Charmed. A little Katie insight there, just for you.
Our first meal was grilled chicken breast with a peanut sauce, which I made from scratch, and sweet potatoes. It's possible that I butchered the recipe, but it was edible, and there was no picture in the cookbook, so we'll never know!
Sunday morning, I made whole wheat pancakes... without eggs! I used a dairy/egg free mix from Kroger, soy milk, oil and a banana instead of egg. I also added a teaspoon of sugar. I then tried to get really creative and added some milk free semi sweet chocolate chips. After sampling my first pancake, I realized that milk free semi sweet chocolate chips don't actually taste like regular chocolate chips, so I picked them out of the batter and we were good. Preston wasn't into the whole 'whole wheat banana' thing, so he had egos and commented that I used to make some mean regular waffles back in the day. So the next morning, I made whole wheat waffles for me and regular waffles for Preston because I'm the best wife ever.
Last night, I made the tortilla soup that we learned how to make at Lake Austin Spa. The recipe calls for crab, which is really good, but I couldn't find any crab in Nacogdoches that tasted like the crab at Lake Austin Spa, so I used chicken breast instead. Still good.
All in all, a few successful cooking experiences under my belt.
