Magdalenas


Magdalenas is Spanish for cupcakes. I think it's fitting because these particular cupcakes are so wonderfully festive. I've been obsessed with cupcakes lately, so I decided to make some for my husband on Valentine's Day. 

Okay, I may have made them for myself. 

We chose to go with my Pink Cake recipe. By MY recipe, I don't mean that I made it up. I mean that Pink Cake has been hanging around my family forever. It's my standard homemade birthday cake. I could eat a whole pan of it, and have, over the course of a week in a college dorm room or two.

However, I accidentally made thirty something cupcakes. Split the recipe, you say? Never heard of such a thing. I took the Valentine's Day survivors to work for the kiddos and they were gone in a few hours. One even said the frosting was her favorite and asked for the recipe. I blushed!


Pink Cake
1 box white cake mix
4 tbsp. flour
3/4 c. vegetable oil
3 eggs, beaten
1/2 c. water
1 pkg. strawberry Jello
1 c. crushed fresh strawberries
1 c. sugar (You could probably omit the sugar, or use half for a less sweet cake. This is REALLY sweet.)

Pink Frosting
1 box confectioners' sugar, sifted
1/2 c. melted butter
8 oz. cream cheese
Crushed strawberries
Dash of salt

Mix the cake mix, flour and Jello together, add water and oil, blend well. Add the beaten eggs and sugar and mix well. Add strawberries and stir until thoroughly blended. For Magdalenas, or cupcakes, bake at 350 degrees for 18 minutes, or until toothpick comes out clean. For cakes, pour into two or three greased and floured cake pans. Bake at 350 degrees for 35 or 40 minutes. Cool completely before frosting.

 

For frosting, Add the melted butter and cream cheese to the confectioners' sugar, mix. Add enough crushed strawberries to make the mixture the consistency to spread on the cake.This is completely up to you. For this batch of magdalenas, I made the frosting much more creamy, as the cream cheese is not a part of the original recipe, and dipped the cupcakes to frost.
