Now that I know it only takes a few minutes to whip up something like this lunch I had today, it's hard to pick a happy meal over a real meal. My kitchen and I have settled nicely into a place where something quick is still something beautiful. I feel like if I just focus on eating beautiful things, then happiness will naturally follow. If I ever write a cookbook, it will be titled Beautiful Things. And if it becomes a smash hit and some snooty woman in Highland Park sits down to lunch and says to the waiter, "Oh no, this dish simply will not do. I only eat beautiful things," well, then, I would be quite pleased with myself.
This dish was so easy. I cooked tomatoes and spinach in a little olive oil and sherry while I sliced up some fresh bread and chicken, both from the deli/bakery at the grocery store. I was sitting down to eat in ten minutes. I think this meal may become my new "Grocery Night Special." Although, I can't remember ever having trouble cooking on grocery nights. Maybe those are the nights I eat leftover in an uncreative manner. Whatever, the reason, I'm glad I thought to get these treats from the deli.

I've found that happiness DOES naturally follow a beautifully-cooked meal, especially when a quick improvisation turns into an edible masterpiece. I hope you do write a cookbook one day - that first paragraph was really enjoyable to read. :-)
